No-Peel Mashed Potatoes

Ingredients

- Potatoes - Sour cream - Butter - Half & half or cream - Salt - Pepper

Set sour cream out to warm up while preparing potatoes.  Wash potatoes well.

Cut potatoes into large chunks and place into a pot of cold salted water.

Boil potatoes until fork-tender. Warm dairy and butter.

Thoroughly drain potatoes once cooked and return to the pot.

Start mashing the potatoes while slowly pouring in the butter and dairy mixture. Stir in sour cream.

Season to taste with salt and pepper. Add more butter on top if desired. Enjoy!

Tip

Make sure your potatoes are super fresh. Older potatoes that have started to sprout eyes, even slight ones, just don't work well for this.
