How to make 

Chicken Pot Pie Soup

Ingredients

- Butter - Onion - Celery - Potatoes - Garlic - Salt - Pepper - Flour - Half & half - Broth - Chicken - Mixed veggies - Thyme & rosemary - Puff pastry

Melt butter in a large pot or Dutch oven.

Saute veggies in melted butter until softened. Add in garlic.

Unfold and cut puff pastry into squares. Add flour to veggies and cook for at least 1 minute.

Stir in half & half and broth. Add potatoes and cook until fork tender. Bake puff pastry.

Stir in the chicken, veggies, and herbs. Heat until warmed through.

Ladle into bowls and top with a square of the baked puff pastry.

Tip

If you prefer pie crust, you can also roll out pie crust, cut it into smaller rounds or squares, and bake it to top your soup with.
