Cake with Plums Recipe

Ingredients

- Plums (preferably Italian variety) - Flour - Baking powder - Salt - Granulated sugar - Vanilla - Lemon zest - Butter - Eggs - Cinnamon

Preheat your oven and prepare plums by washing, pitting, and slicing into quarters.

Place flour, baking powder, sugar, vanilla, lemon zest, butter, and eggs into a mixing bowl.

Mix on low to combine ingredients and then up to medium-high for about 2 minutes until you have a smooth and creamy batter.

Evenly spread the batter into a greased springform pan .

Top the batter with sliced plums.

Mix flour, sugar, salt, cinnamon, and butter together until large clumps of streusel form.

Evenly sprinkle the crumbs on top of the plums.

Bake until the streusel is golden.

Cool for 10 minutes. Release the edge of the springform pan and then continue to cool completely.

Tip

While Italian plums are the traditional variety of plum used for this cake, other plums or fruits such as cherries will also work.
