Kalua  Pork and Cabbage

HOW TO MAKE

INGREDIENTS

Bone-in pork shoulder roast Salt (preferably Hawaiian) Chicken broth or water Liquid smoke Onions (optional) Cabbage Garlic (optional) Banana leaves (optional)

STEP 1

Preheat the oven and pat pork shoulder dry.

STEP 2

Generously season the underside with Hawaiian salt.

STEP 3

Pour the broth or water into a Dutch oven or roasting pan.

STEP 4

Place the roast into the Dutch oven with the fat cap side up. Season with salt.

STEP 5

Cut slits into the roast and pour the liquid smoke over the roast.

STEP 6

Roast at 225F for 8 to 10 hours until fall apart tender.

STEP 7

Remove the bone and shred the pork.

STEP 8

Sauté onions in some of the pork juices until slightly softened.

STEP 9

Add cabbage, pork, garlic, and cooking juices.
